Coronation chicken or “Poulet Reine Elizabeth” was created in 1953 when renowned florist Constance Spry and cordon bleu chef Rosemary Hume catered for a banquet to celebrate the coronation of Elizabeth II.

It became widely popular across Britain as it was published widely so it could be enjoyed at street parties.

Perfect as a lunch or to bring to a potluck

Whether your making a delicious lunch or hoping to impress with your culinary skills at a potluck this Vegan Coronation Chick*n salad will not let you down. It’s creamy, spicy and a little bit tangy from the combination of mango chutney and greek yogurt.

 280 g Oumph chunks
 ½ cup Vegan mayonnaise
 ½ cup Vegan greek yogurt
 1 tbsp Mango chutney
 1 tsp Mild curry powder
 Salt and pepper to taste

In a pan add the Oumph and cook until it's heated through and starting to brown on the ends. Add salt and pepper to taste. Allow cooling to room temperature.

Chop the Oumph into even bites.

In a bowl combine the vegan mayonnaise, the vegan greek yogurt, mango chutney, and mild curry powder and stir well to combine. Season with salt and pepper to taste.

Mix the sauce and the Oumph to make a tasty and creamy salad.

Now is the time for you to play around and adjust the taste according to your taste buds. Add more salt, pepper, curry or mango chutney if you want to.

Enjoy as a salad on fresh bread with some lettuce or any way you would like to.
