Gluten-free maple and pecan granola

Easy maple pecan gluten-free granola recipe. Perfectly crunchy, cheaper than the store-bought ones and much better for the environment. You will never go back to spending money on store-bought granola again.

I really wanted to try to make my own granola as an attempt to be more healthy and environmentally friendly. For years and years, I have been buying granola and muesli from the shop. It’s handy and convenient, but also not the best for me, or the environment.

When buying ready-made granola from the shops you are also buying packaging, usually both cardboard and plastic. Making your own will not only save you some cash but also reduce your waste.

For the environment

I am constantly trying my best to be more environmentally friendly. I recycle as much as I can, I bring my own reusable shopping bag to the shops and I definitely do not litter. However, living a plastic-free life can be hard. Most if not all of the produce I buy comes in a plastic bag, unfortunately. The commercial grocery shops can’t compare with the farmer’s markets and let’s be honest, most people shop at commercial grocery shops. I wish I could do more, honestly and I do try my best. And I am going to try to do more to reduce plastic. I was so sad when I got home from the shop today finding that 6 out of 7 items I bought were wrapped in plastic. I think I could do much better than that.

One thing I am actively doing to reduce plastic is to make as much as I can from scratch. This time its granola. I usually buy my granola and it’s very tasty. However, it’s full of sugar and also wrapped in plastic. So, I cutting store-bought Granola from my shopping list and making my own.

This Granola is so easy to make, is gluten-free and does not have any white sugar. Takes about an hour to make. That’s less time than it takes to drive to the shop to buy it.

 2 cups Gluten free oats
 ¼ cup Dried banana
 1 tbsp Sunflower seeds
 ¼ cup Shredded coconut
 1 tbsp Coconut oil
 ½ cup Pecans
 ¼ cup Chocolate chips
 ¼ cup + 2 tbsp Maple syrup

Gather and measure all your ingredients.

Start by chopping the pecans.

Also lightly chop the dried bananas and sunflower seeds.

Mix all the ingredients in a bowl and make sure to coat all the mixture with coconut oil and maple syrup.

Line a baking tray with parchment paper. Pour the mixture into the tray and flatten to an even layer.

Bake for about one hour on 130°C. Check on it regularly and lower the heat if necessary. The granola is ready when it has reached a golden colored and is crunchy.

Store in an airtight jar for up to a month. Enjoy with yogurt and fresh berries or fruit.
