How is it already the second half of February? It feels like we just celebrated Christmas moments ago. We have been working hard on our budget for the past two months. Last year was more about survival and trying to keep ourselves happy with a few too many deliveries from Amazon and a bit of overindulgence in food and drink. 

This year we are focusing on being frugal. Our goal for the year is to save up as much as we can by living frugally and saving as much as we can. 

That’s why I’ve challenged myself to create more budget recipes in the next few months. In doing so I’m telling you now that there are two things I won’t compromise on, those are flavor and nutrition. Life’s too short to eat bad food. I like my recipes to taste good and I want them to be nutritious. With a few nice treats in between. 

Cajun Dirty Rice

Dirty rice is a traditional Louisiana Creole dish made from white rice which gets its “dirty” signature look from being cooked with small pieces of meat or ground meat, finely chopped vegetables and spiced with cayenne and black pepper. 

To keep things kind we’ve opted for vegan chicken pieces but it’s also great to use vegan mince for this recipe. My homemade Cajun seasoning mix gives the dish a good kick too.

What you’ll need to make this recipe:

  • 3 cups rice, cooked and cooled
  • 250g vegan chicken pieces
  • 1 pepper, diced
  • 1 onion, diced
  • 2-3 cajun seasoning
  • 200 ml vegan beef stock
  • 200g frozen mixed vegetables
  • 1-2 tbsp olive oil

Step-by-step instructions

Step 1

Heat the olive oil in a pan and add the onion. Sauté the onions until they are soft. Add the diced pepper and continue to sauté.

Step 2

Add the mixed frozen vegetables and cook until hot through.

Step 3

Set the vegetables aside and cook the vegan chicken pieces until cooked through. Add about 1-2 tsp of cajun seasoning to flavor the chicken pieces. 

Step 4

Combine the cooked rice, cooked vegetables, and vegan chicken pieces in the pan and add the vegan beef stock. Add 2-3 tablespoons of the Cajun Seasoning (link again) and toss everything together and heat until piping hot.
